Zoodles with Peanut Lime Sauce | Vegan Low-Carb Dinner

This Asian-inspired dish can be cooked up in about 20 minutes and is filled with nutrients and protein. This dish does require a device to be able to make your veggies into noodles, but you can find pre-spiralized noodles at the grocery store as well. Let's get cooking!
Ingredients: 1 Medium-large Zucchini (per serving)
1 Large Carrot (per serving)
3 Tbs Peanut Butter
1 1/2 Tbs Soy Sauce
Sriracha/Hot Sauce of Choice w/ desired amount
1 1/2 Tbs Minced Garlic
Juice from 1/2 Lime
1/2 Cup Broccoli
1/2 Medium Red Pepper
5 Green Beans (per serving)
Garlic Salt
Pepper
Dash of Chili Powder
1/4 cup Cashews
Splash of water
If making your own spiraled veggie noodles, spiralize your zucchini and carrots. Dice your pepper, broccoli, and cut the tips off of your green beans.
Heat a large skillet over medium-high heat. Add in your peanut butter, soy sauce, and hot sauce. Let melt and mix together for about a minute. Add in a splash of water to help break down the peanut butter to make it more into a sauce.
Add in your veggies and cashews and mix to coat evenly with sauce. Using tongs, lift veggie mixture a few times a minute to make sure everything is cooked evenly and coated well with the sauce.
Cook everything in the pan for about 8 minutes, until warmed throughout. Serve and enjoy!
