Veggie Fajita Bowls | Vegan Meal Prep

This veggie fajita bowl makes the perfect meal prep for lunch or dinner! Jam packed with nutrients to fuel you through the rest of your busy day. Pairing it with a cilantro lime rice and fresh guacamole will leave you craving more. Let's get cooking!
Ingredients: 1 Small Sweet Potato
1/2 14oz Can Black Beans
1 Red Onion
1/2 Green Bell Pepper
1/2 Red Bell Pepper
1/2 Cup Corn (fresh or frozen)
1 Cup Uncooked Brown Rice
2 Tbs Minced Garlic
Lime Juice
Fresh Cilantro
Cumin
Taco Seasoning
Garlic Salt
Pepper
Olive Oil
Optional: Buy premade guacamole, or home make some with fresh avocados, tomatoes, onion and garlic!
Cook brown rice according to package. Once rice is cooked, squeeze in fresh lemon juice and chopped cilantro. Set aside.
While rice is cooking, prep your veggies similar to a fajita dish. I sliced mine in long, thin slices.
In a skillet, heat oil over medium-high heat. Add in your potato, pepper and onions. Sauté until sides start turning brown. Add in corn and black beans and sauté for another couple of minutes. Add in your minced garlic, seasonings, and a squirt of fresh lime juice. Sautee until veggies are soft.
If meal prepping, add a scoop of rice and veggies to containers for each day. Add your guacamole on fresh the day of. This can also make a perfect weeknight dinner!
