Vegetable Detox Soup | Vegan Crock Pot Recipe

After stuffing my face for the Thanksgiving Holiday, I was ready to get my body flushed and feeling less bloated. I put together this vegetable soup in my crock pot to help fuel my body with nutrients. This recipe would also make a great minestrone base if you wanted to add some noodles in. It's so simple and full of flavor. This can also be easily frozen to enjoy at a later date. Let's get cooking!
Ingredients: 1 Large Sweet Potato (peeled and cubed)
3 Medium-Large Carrots (peeled and cute)
2 Can of White Kidney Beans
1 White Onion (diced)
2 Stalks Celery (cut)
1 Can Diced Tomatoes With Juice (no salt added)
Handful of Spinach
4 Cups Vegetable Broth
4 Garlic Cloves or 2-3 Tbs Minced Garlic
Fresh Squeezed Lemon Juice
1 Tbs Fresh Ginger (grated)
Pinch of Nutmeg
Pinch of Tumeric
Pinch of Cinnamon
Paprika
Salt and Pepper to Taste
1 Bay Leaf
Prep your ingredients and add everything but your spinach to the crock pot. Mix in your seasonings until everything is well combined. Cook on LOW for 6-7 hours, until vegetables are tender.
Add in your Spinach at the end of cooking and remove bay leaf. Enjoy!
