Vegan White Mac and Cheese | Vegan Dinner Ideas

If you've been craving the perfectly creamy vegan mac and cheese, than you have found your new favorite recipe! This rich flavor will leave your tastebuds so satisfied, you'll never go reaching for a boxed mac and cheese again. Let's get cooking!

Ingredients: 8oz Shell Pasta (I used a chickpea pasta for high protein and fiber)

1/8 Cup Vegan Butter

1/2 Cup Whole Wheat Flour

1 1/4 Cups Unsweetened Almond Milk

1/2 Cup Vegan Mozzarella

Salt and Pepper

Optional: Fresh basil to top, roasted vegetables to mix in

  1. Bring a large pot of water to a boil. Add your pasta and cook according to box. Drain and set aside.

  2. While pasta is cooking, melt vegan butter over a medium-large skillet. Whisk in your flour to create a roux/paste. Whisk in your almond milk and mix together until no clumps from the roux are left.

  3. Bring to a simmer, reduce heat to medium-low, and continue to simmer for 1-2 minutes. Add in your vegan cheese, salt, and a good amount of pepper. Continue to mix until the cheese has melted.

  4. Add in your noodles and mix until they are well coated. If adding in vegetables*, mix them in at this time as well.

Optional: Top with basil and crushed red pepper if you choose. For vegetables, I air-fried red pepper, zucchini, and cauliflower which was the perfect additive!
