Simple Vegan Sugar Cookies | Vegan Baking

I am not huge on baking. But every once in a while a craving comes along for a warm, homemade cookie that I just have to fulfill! This recipe is super simple and can be made in under 30 minutes. Get out your baking sheet, and let's get cooking!
Ingredients: 1 Cup Non-Dairy Butter (I used Country Crock Brand)
3/4 Cup Sugar (Coconut Sugar is my favorite)
1 Tbs White Vinegar
1 Tsp Vanilla Extract or Maple Syrup
2 Cups All Purpose Flour (I use Whole Wheat)
1 Tsp Baking Soda
Pre-heat oven to 350F. Soften your butter in the microwave for about 15 seconds.
Cream together your butter and sugar in a large bowl until it looks a bit fluffy. I used a hand mixer for this. Beat in your vanilla extract/syrup and vinegar until well combined.
Slowly add in your flour and baking soda and mix well. If the dough is a bit crumbly, set it in the fridge for 10 minutes to soften up a bit.
Using a tablespoon, scoop out the dough and roll together until a ball shape forms. Add to a greased baking pan and flatten into a circle shape. Option to sprinkle the tops of cookies with sugar before baking.
Bake in the oven for 10 minutes. If cookies are still soft, bake in increments until 2-3 minutes until edges start turning golden brown. Store in an airtight container once cooled, or enjoy them right away!
Note: Recipe should make about 15 cookies.
