Easy Vegan Mashed Potatoes | Vegan Thanksgiving Dishes


This Sunday I attended a friends-giving which was the perfect way to get some practice in on Holiday Recipes! I have a few fun recipes up my sleeve to try for our actual Tofurkey Day, but today i'm sharing some simple and delicious recipes that anyone can serve for their holiday meal! Let's get cooking.


Ingredients for about 7 servings:

8-9 Small Golden Russet Potatoes

4 Tbs Vegan Butter (I'm a fan of Earth Balance)

Salt and Pepper

3 Tbs Vegan Cream Cheese, preferably with Chive (Kite Hill Brand is great)

Warm Almond Milk (amount varies depending on how smooth you like your potatoes)


  1. Peel and cut potatoes. Cut them into smaller sized chunks.

  2. Add potatoes to a large pot and cover them with water. Bring to a boil and cooked covered for 15-20 minutes, until potatoes are soft.

  3. Once cooked, drain water out of pot. Add potatoes back into the warmed pot.

  4. Using a mixer (if you have one, if not a whisk or masher will work), start to "mash" your potatoes. When they begin to smooth out, add in butter, cream cheese, and warmed almond milk. Start with 1/2 cup of milk and continue to pour more in until desired consistence is met. Add in your salt and pepper and finish blending. Enjoy!
