Easy Vegan Mashed Potatoes with Gravy
Creamy, savory, vegan mashed potatoes that the entire family will love! Enjoy these on holiday occasions, or with your favorite dinners. I've also included my simple homemade gravy recipe for use as well. Let's get cooking!
Ingredients (7 servings): 8-9 Small Golden Russet Potatoes
1/3 Cup Almond Milk
Salt and Pepper
Ingredients for Gravy: 2 Cups Vegetable Broth
1 1/2 Tbs Soy Sauce
1/4 Cup Flour ( I use whole wheat)
3 Tbs Nutritional Yeast
For Mashed Potatoes:
Peel and cut potatoes. Cut them into smaller sized chunks.
Add potatoes to a large pot and cover them with water. Bring to a boil and cooked covered for 15-20 minutes, until potatoes are soft.
Once cooked, drain water out of pot.
Using a mixer (if you have one, if not a whisk or masher will work), start to "mash" your potatoes. When they begin to smooth out, add in butter and almond milk. Start with 1/2 cup of milk and continue to pour more in until desired consistence is met. Add in your seasonings and blend until Smooth. Enjoy!
Add ingredients to a medium sized pot and bring to a boil.
Continue to whisk over medium heat until gravy thickens.
Serve warm over desired dish. Enjoy!
