Zucchini and Green Bean Bowl | Vegan Lunch Idea

I am constantly on the hunt for simple, tasty and filling vegan lunches. This recipe will only take you about 5 minutes to make and is packed with flavor and protein. Let's get cooking!
Ingredients: 1 Zucchini (spiraled)
10 Green Beans (with the ends trimmed)
Handful of Sliced Almonds
1/4 Cup Cooked Quinoa
2 Cloves Garlic or 1 Tbs Minced Garlic
Lemon Juice
Olive Oil
Dried Oregano
Salt and Pepper to taste
Using a spiralizer, spiral your zucchinis. Cut off the ends of your green beans.
Heat Olive Oil in medium sized skillet over medium heat. Add in your prepped vegetables and almond slices and sauté for about 5 minutes. Squeeze in fresh lemon juice and top with seasonings.
If Quinoa is pre-cooked, add into the skillet to warm. If Quinoa is freshly cooked, top your vegetables and almonds on top of your Quinoa and enjoy!
