Zucchini and Green Bean Bowl | Vegan Lunch Idea
I am constantly on the hunt for simple yet tasty and filling vegan lunches. This recipe will only take you about 5 minutes to make and is packed with flavor and protein. Let's get cooking!
Ingredients: 1 Zucchini (spiraled)
10 Green Beans (with the ends trimmed)
Handful of Sliced Almonds
1/4 Cup Cooked Quinoa
2 Cloves Garlic or 1 Tbs Minced Garlic
Salt and Pepper to taste
Heat Olive Oil in Medium sized skillet over medium heat. Add in your prepped vegetables and almond slices and saute for about 5 minutes. Squeeze in fresh lemon juice and top with seasonings.
If Quinoa is pre-cooked, add into the skillet to warm. If Quinoa is freshly cooked, top your vegetables and almonds on top of your Quinoa and enjoy!
