Vegan Gumbo | Vegan Crock Pot Recipes


Nothing warms the soul better than a nice steamy bowl of Gumbo. This dish is jam packed with veggies and is perfect for feeding a crowd. It is one of the more simple crock pot recipes as well since it requires minimal prep work, just dump everything in a go about your day! Let's get cooking.


Ingredients: 2 14oz Cans Kidney Beans

2 14oz Cans Diced Tomatoes

1 Medium Onion

2 Large Celery Stalks

1 1/2 Cups Asparagus

1 Large Green Pepper

2 Large Carrots (peeled and sliced)

3 Cups Vegetable Broth

3 Tbs Minced Garlic

2 Tbs Soy Sauce

2 Tbs Tomato Paste

Cajun Seasoning

Dried or Fresh Parsley

Dried Thyme

Salt and Pepper

Optional: Prep your favorite rice ahead of time to have ready for serving


  1. Wash and cut all your veggies. Add everything to the slow cooker except for tomato paste and rice (if using).

  2. Option to cook on high for 4 hours or on low for 8.

  3. In the last half hour of cooking, mix in your tomato paste to help thicken the mixture.

  4. Adjust seasonings to your liking and enjoy!
