Vegan Elotes | Vegan Mexican Recipe


One of my absolute favorite side dishes is elotes! Elote is a classic Mexican street food of corn on the cob topped with mayonnaise, spices, and cheeze. Fire up the grill and let's get cooking!


Ingredients: 2-4 Corn on the Cob

Vegan Parmesan ( I used Nooch It , but the Follow Your Heart brand works great too!)

3 Tbs Vegan Mayo (I use Follow Your Heart's Vegenaise)

Chili Powder

Lime Juice

Minced Garlic

Cilantro (Fresh preferred but dried works too)

  1. Heat your grill and cook corn in the husks until outside are browned and kernels are a nice yellow.

  2. While corn is cooking, mix together your mayo, lime juice, garlic, and 1 Tsp of chili powder. Mix until well combined.

  3. Once corn is cooked, carefully remove the husks as the corn will be hot. Spread mayonnaise mixture on the corn, then sprinkle chili powder, cilantro, and parm on top. Enjoy!
