Homemade Vanilla Protein Bars | Healthy Snacks

Simple, quick, and healthy snacks are always on my radar. If you're like me, then these vanilla protein bars are about to be your new go-to snack for the year! These bars have a perfectly sweet flavor and hold together surprisingly well for being so easy to make. Let's get cooking!
Ingredients: 1 Cup Oats
2 Scoops Vanilla Protein Powder (I used Ka'chava*)
1/2 Cup Natural Creamy Peanut Butter
2 Tbs Coconut Oil
1 Tbs Maple Syrup (can use agave if preferred)
1/8 Cup Oat Milk
In a medium sized mixing bowl, mix together your oats and protein powder.
In a small pan over medium heat, slowly melt together your peanut butter and coconut oil until melted and a smooth consistency is met. This should only take a minute or two. Remove from heat and mix in your maple syrup.
With a spatula, add in your peanut butter mixture to your oats and mix until well combined. It should look fairly sticky at this point.
Slowly stir in your oat milk and combine until everything is holding together well.
Prepare an 8x4 baking dish with parchment paper. Add your mixture to the pan and press down on it with the spatula until flat, like below:

6. Set mixture in freezer for 30 minutes. Take it out and let it cool for a few minutes until slicing into bars. This should make about 5-6 bars. Keep refrigerated and enjoy!

*I know Ka'chava is expensive, so this can be swapped out with whatever vanilla protein powder you like. If Ka'chava is in your budget, I highly recommend giving it a try! The flavor is amazing and it is jam packed with nutrients and minerals to fuel your day.
