Thai Chickpea Salad with Peanut Dressing

Trying to eat healthy during a pandemic is tough. I know I've been snacking and eating way more carbs than usual. I put together this simple salad with major flavor and a homemade peanut dressing that is sure to entice your taste-buds. Let's get cooking!
Ingredients for Salad: 1 Can Chickpeas (garbanzo beans, drained)
1/2 Small Head of Red Cabbage
2 Small-Medium Carrots (peeled and shredded)
1 Medium Red Pepper
1/2 Cup Chopped Green Onion
Salt and Pepper
Ingredients for Dressing:
1 1/2 Tbs Peanut Butter
1 Tbs Minced Garlic
1 Tbs Freshly Grated Ginger
1 Tbs Apple Cider Vinegar
Tumeric
Cayenne Pepper
Prep your veggies and mix together in a large bowl. Make sure to drain your chickpeas thoroughly. Use a cheese grater to grate your carrots. Season with a little salt and pepper. If prepping for later, cover and set in the fridge until ready to eat.
Make your dressing my combining all ingredients in a container you can seal tight. Use water to thin out the peanut butter to make it a more thin dressing. Taste and adjust seasonings to your liking. Mix in with veggies when ready to eat. Enjoy!
