Sushi Spring Rolls | Vegan Recipe

This dish was truly a fun one to make! It is a nice light meal for our warmer days, and truly tastes like sushi. This recipe makes a perfect dish for at home or even a party plate. The homemade dipping sauce is the perfect flavor additive as well. Let's get cooking!

Ingredients: Rice Paper Wrappers

1 Cup of Sushi or White Rice

1 Package Firm Tofu

1/3 Small Red Cabbage

1 Small Cucumber

1 Large Carrot

2 Ripe Avocados

Sesame Seeds

Optional: 1 Mango

For the Sauce:

1/4 Cup Soy Sauce

2 Tbs Rice Vinegar

Red Pepper Flakes

Chopped Fresh Cilantro

  1. Press the water from your tofu. I place mine between 2 plates and set something heavy on top for about 10 minutes. Once pressed, slice into long, thin pieces. Toss your tofu in a bowl with a drizzle of olive oil, soy sauce, and 1 Tsp Cornstarch. For extra crispy tofu, Add to an air fryer and cook at 395 for 15 minutes, tossing half way. You can also bake your tofu in the oven at 400 Degrees for about 20 minutes, flipping half way.

  2. While tofu is pressing, bring 1 cup of water to a boil. Add in your rice, lower heat, and cook for recommended time on package.

  3. Next, begin to prep your produce. Peel carrots and slice into long, thin strips. Slice your cucumber, cabbage, and mango (if using) to about the same sized strips.

  4. While everything is cooking, make your sauce by mixing ingredients together well. Taste and adjust pepper flakes and cilantro if needed. Set aside.

  5. Once everything is cooked, prep a large plate with a little bit of water. Very carefully dip your rice paper in the water until it's all gently covered with water. I find it helpful to gently rub my fingers on top of the rice paper to spread the water. We will do this one at a time and fill them right away before wetting the next wrapper.

  6. Set your wet wrapper on a flat surface. A few inches in from one side, sprinkle a thin layer of the sesame seeds. Top with 2 tbs of the cooked rice and a thin slice of tofu and produce. On the other side of the roll, place 2 pieces of avocado(see below).

7. Starting from the side with your produce, very slowly begin to roll your wrapper up. Tuck the ends in before rolling past the avocado. Continue until all produce or wrappers have been used. Serve with dipping sauce and enjoy!
