Super Greens Salad | Simple Salad Recipe


The last salad recipe I posted had quite a bit of prep work, so I wanted to share another delicious recipe that takes very little time to make! This salad is packed with nutrients to leave you full and energized to continue on with your day. A perfect option to meal prep for the week or to bring along for a dinner party. Light, refreshing, and ready in 10 minutes or less. Let's get cooking!


Ingredients: Mix of arugula, spinach, and kale

1 Small Cucumber

1 Avocado

1/2 Cup Blueberries

1/2 Cup Sliced Almonds

Vegan Cheese (See below for what I used!)


  1. Get out a large bowl or dish. Fill the bottom with your mixture of arugula, spinach and kale. Sprinkle in your blueberries and sliced almonds.

  2. Rinse your cucumber and cut it into half circle slices. Add to your bowl.

  3. Cut your avocado to desired sliced sizes and add in as well.

  4. Add in your vegan cheese. I used 2 of the wedges below and tore them into bite sized pieces. Trader Joe's has a vegan feta that would be a perfect addition for this salad.

  5. Final step is to choose your dressing. I used a bottled raspberry vinaigrette from my favorite local farm stand. Any sort of balsamic or vinaigrette would make a great option for this salad. Enjoy!
