Caprese Bagel with Breakfast Patties | A Simple Vegan Breakfast

This recipe was put together by my boyfriend! The sausage patties are sadly not homemade, but they were a delicious treat for a Sunday Morning! We paired this meal with a fruit smoothie and it was truly the best way to kick off our day. Let's get cooking!
Ingredients: Bagel of your choice (I use Whole Wheat)
Vegan Cream Cheese (my favorite brands are Kite Hill and Tofutti)
1 Large Tomato
Olive Oil
Balsamic Vinaigrette
Garlic Salt
Pepper
Dill
Vegan Breakfast Sausage Patties (favorite brands like Gardein and Morning Star have these available. Option to find a homemade recipe as well!)
Toast bagel to desired amount. While bagel is toasting, slice your tomato into thin strips.
Heat oil in medium skillet over medium heat. Cook sausage patties according to package (they should be browned on both side, about 6 minutes).
Grab your vegan cream cheese and add desired amount to toasted bagel. Top with sliced tomatoes and seasonings. Drizzle with balsamic.
Serve with sausage patties and fruit smoothie! We drizzled a little maple syrup onto our patties.
Smoothie Recommendations: Use desired fruits and plant based milk. For added proteins, I recommend flax seed, hemp seeds. peanut butter, and/or spinach! Option to add plant-based yogurt as well. Enjoy!
