Pumpkin Chili | Cozy Vegan Meal


What better way to warm up this winter, than with a bowl of pumpkin chili? This recipe is super nutrient dense, leaving you feeling full and energized after every bowl! Total cooking time will be about 30 minutes. Let's get cooking!


Ingredients: 1 Yellow Onion

1 Bell Pepper

1 Jalapeño

1 Large Carrot

1 14oz Can Pinto Beans

1 14oz Can Black Beans

3 Garlic Cloves (minced)

1 14oz Can Diced Tomatoes (Fire Roasted Preferred)

1 1/2 Cups Pureed Pumpkin

2 Cups Water or Vegetable Broth

2 Tsp Soy Sauce

Cumin

Chili Powder

Cumin

Dried Oregano

Lime Juice

Olive Oil

Optional Toppings: Fresh Cilantro, Avocado, Tortilla Strips, Hot Sauce.


  1. Dice your vegetables. In a large soup pot, heat olive oil over medium-high heat. Add in your veggies and sauté until they start to brown, about 5-7 minutes.

  2. Add in your garlic, diced jalapeno, soy sauce and spices. Sauté together for 30 seconds.

  3. Add in cans of tomatoes, beans, pumpkin puree and broth/water. Mix together well, cover, and simmer on low for about 15 minutes.

Enjoy! Makes about 4-6 servings.
