Pulled BBQ Sweet Potato|Cookout Ideas


Spring and Summer are right around the corner, so it's time to start thinking of delicious plant-based dishes to bring for grill outs, picnics, and all the other fun the warm weather brings. This "pulled" bbq sweet potato takes less than 10 minutes to make and is tasty as fuck. I loved eating it on a pretzel bun like the photo above, but it's great on a regular bun and even in a lettuce wrap for a healthier option. Let's get cooking!


Ingredients: 1 Medium Sweet Potato

1/4 Cup BBQ Sauce of your choice

Olive Oil

Pepper

Garlic Salt

Onion Powder


  1. Using a cheese grater, grate your sweet potato.

  2. Heat olive oil in a pan over medium heat and add your grated sweet potato to the pan. Saute for about 3-5 minutes, until your sweet potato starts to lightly brown.

  3. Add in bbq sauce of your choosing to the pan and stir well so sweet potato is evenly covered. Sprinkle with seasonings.

  4. Serve on your bun or lettuce wrap and enjoy!
