Perfect Winter Salad with Maple Dijon Dressing

I made this "Christmas wreath" salad for our holiday celebration, and it was a total hit! It can of course be made in a salad bowl to easily enjoy all winter long. The seasonal fruits mixed with the homemade maple dijon dressing will be a burst for your tastebuds. Let's get cooking!
Ingredients: 3-4 Cups Baby Spinach
1 Pear
1 Cup Dried Cranberries
1 Cup Pomegranate arils
1 Cup Glazed Pecans
Optional: 1/2 Cup Dried Cherries, Vegan Cheese
Dressing: 3 Tbs Maple Syrup
2 Tsp Dijon Mustard
1/3 Cup Apple Cider Vinegar
4 Tbs Olive Oil
Salt and Pepper to taste
Mix all ingredients together for your dressing and whisk until well mixed. Taste and adjust seasonings as needed. Cover and set in fridge.
Slice your pear to desired size. If using a fresh pomegranate, scoop out the seeds.
Add your spinach to a bowl (or a circular tray if making wreath salad). Top with cranberries, pecans, pomegranate and any other toppings you may be using. Eat fresh or store in the fridge for up to 4 days. Enjoy!
