One-pot Creamy Chili | Vegan Dinner Ideas

This new dish is going to easily become a staple for weeknight dinners in my kitchen. It only uses one large pot or pan to cook and takes less than 25 minutes. It's savory and filled with nutrients. Let's get cooking!
Ingredients: 1 14oz Can White Beans
1/2 Green Pepper
1/2 Yellow Pepper
1 Yellow Onion
1 Jalapeno or spicy pepper of your choice
3-4 Tbs Vegan Cream Cheese (Tofutti is my go to)
2 Cups Vegetable Broth
2 Tbs Minced Garlic
Chili Powder
Garlic Powder
Cumin
Oregano
Salt and Pepper
Optional: Green Tabasco Sauce
I used my largest pan and heated olive oil over medium-high heat. Dice your veggies and saute your onion, peppers, and garlic for about 5 minutes, until they begin to lightly brown.
Add in your jalapenos, vegetable broth, 2 Tbs cream cheese, and beans. Mix and cook down your cream cheese before adding in another 1-2 Tbs and your seasonings. I added in about 2 tbs of chili powder and a layer over the chili of each seasoning. Taste and adjust to your liking. Simmer your pan for about 10 minutes. Serve and enjoy!
Suggestion: We added in green Tabasco sauce and thought it was the perfect flavor additive!
