Mock Chicken Salad | Vegan Lunch Ideas


This vegan chickpea salad is the perfect lunch to meal prep for a busy week! Can make a perfect sandwich or lettuce wrap for your days on the go. Extremely health with no lack of taste. Let's get cooking!

Ingredients: Small Head of Broccoli

1 Large Carrot

1/4 Cup Red Onion

!/2 Large Red Pepper

3/4 !4oz Can of Chickpeas

1 Small Jalapeno

Sauce: 2 Cups Raw Cashews

Minced Garlic

Fresh Lemon Juice

Green Onions

Dill Weed


2 Tbs Water (more as needed)

  1. Blend together produce ingredients (not chickpeas) in a food processor and pulse until the pieces are small. Set aside.

  2. Add all the sauce ingredients to a blender and blend until smooth. Add more water as needed to get a creamy consistency.

  3. Mix ingredients together in a bowl and eat within 5 days!

Perfect on your favorite bread, lettuce wrap, tortilla, or salad topping!
