Mediterranean Flat Bread | Vegan Dinner Idea's

I was inspired to make this dish from a post I saw on Pinterest and was pleasantly surprised with the outcome! This flatbread is super flavorful and packed with protein thanks to the chickpeas. Let's get cooking.
Ingredients: 1 Naan Bread (per serving. Recipe is for 1 serving)
1/2 Can Chickpeas (drained)
1 Tomato
1 Onion (red or sweet)
2 Tbs Garlic
Olive Oil
Cumin
Tumeric
Curry Powder
Paprika
Salt and Pepper
Sriracha Sauce
Homemade Vegan Tzatziki Sauce:
1/4 Cup Tahini
Lemon Juice
1/4 Cucumber (grated)
Dill
Water
Salt and Pepper
Pre-heat oven or toaster oven to 400 Degrees F.
Heat oil in a large skillet over medium high-heat. Dice onion and saute until it begins to turn translucent, about 4 minutes. Add in garlic and saute for another minute before adding in chickpeas and seasonings. Turn heat down to medium-low and cook veggies until chickpeas have a bit of a crunch.
Make your Tzatziki. Grate your cucumber and set in a bowl with salt to help drain the water out. While cucumber is draining, mix all other ingredients together until smooth. Add in your cucumbers and set aside.
Add your Naan Bread to the pre-heated oven and bake for about 2-4 minutes. Take Naan Bread out and layer your tzatziki. Top with sauteed veggies and diced tomatoes. For a kick, drizzle sriracha sauce over your flatbread. Cut into desired slice sizes and enjoy!
