Jambalaya | Vegan Dinner Ideas

This stove top jambalaya is the perfect hardy meal that can be made in about 45 minutes and only requires one pot/pan. This recipe will make a lot of servings so it's perfect for a party or to meal prep for the week! You can easily freeze the leftovers to enjoy at a later date. Let's get cooking!
Ingredients: 2 Cups Uncooked Rice (I used brown rice)
4 Cups Vegetable Broth
1 Can Kidney Beans
1 Can Diced Tomatoes
1 Large Yellow Onion
1 Green Pepper
2 Tbs Minced Garlic
2 Tbs Soy Sauce
1-2 Tbs Tabasco
Oregano
Basil
Thyme
Cayenne Seasoning
Cajun Seasoning
Pepper
Salt (to taste)
Olive Oil
Optional: Mushrooms and Celery
Heat a large pot or pan (something you can cover) over medium-high heat. Add in olive oil or a splash of water. Saute onion and garlic until they begin to soften. Add in pepper and saute until soft. If using celery and mushrooms, add them in at this time as well.
Add rice, beans, tomatoes, broth, spices and sauces to your dish. Bring to a boil, cover, and reduce heat to a simmer. If using brown rice, allow 40 minutes for the broth to soak. If using white rice, give it about 15-20 minutes. Stir occasionally.
When liquid is absorbed, taste and adjust seasonings as needed. Enjoy!
