Instant Pot Vegetable Chow Mein


I was recently gifted an instant pot and wow! Has it been a game changer. It's the perfect tool for quick weeknight dinners that are full of flavor. This chow mein was super simple and what I call a "dump and go" meal. Let's get cooking!


Ingredients: 1 Pack Stir Fry Noodles

1/2 Medium Head Broccoli

1 Large Carrot

1/2 Medium Green Cabbage

1 Small Red or Green Pepper

1 Cup Fresh Green Beans or Snap Peas

1 Large Stalk Green Onions

2 Tbs Minced Garlic

4 Cups Veggie Broth or Water

2 Tbs Soy Sauce

2 Tsp Rice Vinegar

1 Tablespoon Sriracha

1 Tablespoon Ketchup

1 Tbs Brown Sugar


  1. In a medium sized bowl, mix together veggie broth or water, soy sauce, vinegar, ketchup, sriracha, and brown sugar until well combined.

  2. Pour sauce mixture into pot. Add your package of noodles to the pot than layer on your garlic and veggies EXCEPT broccoli.

  3. Seal your pot, set to manual high pressure and cook for 5 minutes. After the 5 minutes, quickly release the steam. Use tongs to mix your noodles and veggies.

  4. Add in your broccoli and replace lid for 1 minute. Open lid and serve immediately. Top with green onions. Other topping options can be sesame seeds and crushed peanuts. Enjoy!
