Homemade Poke Bowl | Vegan Meals


Poke bowls have been my latest obsession. The last time I was eating one I had a little epiphany about how easily I could make this at home. Now, this is a recipe where I will give you an outline of what I did, but feel free to add and explore with different ingredients/sauces/toppings depending on your liking! Whichever flavors you go for, I promise this is about to be one of your favorite easy week night meals. Let's get cooking!


Ingredients for 2-3 bowls:

1 Cup Uncooked Rice of Choice (I use brown rice)

1/2 Cucumber

1 Large Carrot

1/2 Cup Frozen Edamame

1/2 Cup Frozen Corn

1 Stalk Green Onion

Protein Choices : Tofu or I used Gardein F'sh Fillets

Optional Toppings: Crushed peanuts or cashews

Sauce Options* (See direction 4)


  1. Cook rice according to package, or for a quicker cooking use an instant pot (if applicable)

  2. While rice is cooking, steam your frozen corn and edamame. If you do not have a steamer, you can add them to a microwave safe bowl, add about 1/8 cup of water, cover, and microwave for about 2 minutes. Option to also use fresh, frozen is what I had on hand!

  3. If you opt for the Gardein F'sh for your protein, either bake them or cook in an air fryer (if applicable). For tofu, I recommend pressing out the water, marinating in a little teriyaki sauce, tossing with a pinch of cornstarch and baking at 425 for 20 minutes, flipping half way until slightly brown.

  4. Prep your veggies and toppings. Peel and grate your carrot. Dice your cucumber. Slice your green onions and crush your peanuts (if using).

  5. For sauce* I had a bottle of Thai Chili Sauce that I used for mine while my partner opted for Teriyaki sauce. We also homemade a vegan spicy mayo by mixing vegan mayonnaise with sriracha to our desired spice level. Again, feel free to explore different sauce options you typically enjoy!

  6. Once everything is done cooking, add your rice as your base to your bowl. Top with your protein, veggies, desired toppings and sauce. Enjoy!!
