Green Detox Soup
If you're like me, the snacks start coming a lot more frequently when the weather gets colder. This green detox soup is my favorite way to help flush my body and get my energy feeling strong again! After the holiday season, I will typically pair this soup with a yummy green salad for lunches throughout the week. Let's get cooking!
Ingredients: 1 Medium Head of Broccoli
1 Large Zucchini
1 Yellow Onion
2 Stalks Celery
2 Tbs Minced Garlic
Handful of Spinach or Kale
3-4 Cups Vegetable Broth
Juice from 1/2 a Lemon
1 1/2 Tbs Coconut Oil
Heat coconut oil in a large pot over medium-high heat. Add in onions and sautee until translucent, about 5 minutes.
Add in chopped zucchini, broccoli, and spinach. Sautee for another 2-3 minutes. Add in your vegetable broth and celery. Bring to a boil than cover and reduce to a simmer. Simmer for about 15 minutes or until broccoli can be pierced with a fork.
Turn off heat, remove cover, and add in garlic and lemon juice. Let cool for 15 minutes. Add to a blender or food processor (in batches if needed). Blend until smooth. Enjoy!
