Glazed Carrots | Vegan Holiday Recipe

Another very simple but extremely satisfying vegan dish to serve for the holiday season! I tried this recipe on Sunday for a friends-giving and it was a hit. Let's get cooking!

Ingredients for about 6-7 servings:

5 Medium Carrots, peeled and cut into circles

3 Tbs Vegan Butter (Earth Balance is my go-to)

2 Tbs Brown Sugar

Salt to taste

Optional: 1 Tbs minced garlic

  1. Peel and slice carrots into circles. Add to medium sized saucepan and cover with water. Bring to a boil and cook uncovered for about 2 minutes. Carrots should be slightly soft.

  2. Drain water and set cooked carrots to the side.

  3. Add to the pan your sugar, butter, and salt over medium heat. Mix regularly until mixture begins to simmer. Add in your sliced carrots and cook in glaze for about 5 minutes. Stir regularly.

  4. If using garlic, add in now and cook for another minute or two.

  5. For al dente carrots, simmer in pan with glaze until desired consistency is met. Enjoy!
