Vegan Glazed Carrots | Vegan Side Dishes


A simple but extremely satisfying vegan dish to serve for the holidays or even on your busy week nights! This savory but sweet dish will surely please your taste buds. Let's get cooking!

Ingredients (6-7 servings): 5 Medium Carrots, peeled and cut into circles

3 Tbs Vegan Butter (Earth Balance is my go-to)

2 Tbs Brown Sugar

Salt to taste

Dried Rosemary

  1. Peel and slice carrots to desired size. Add to medium sized saucepan and cover with water. Bring to a boil and cook uncovered for about 2 minutes. Carrots should be slightly soft.

  2. Drain water and set cooked carrots to the side.

  3. Add to the pan your sugar, butter, and seasonings over medium heat. Mix regularly until mixture begins to simmer. Add in your sliced carrots and cook in glaze for about 5 minutes. Stir regularly.

  4. For al dente carrots, simmer in pan with glaze until desired consistency is met. Enjoy!
