Garlic Butter Cauliflower Rice | Vegan Side Dishes

Cauliflower is easily one of my favorite vegetables. It is so versatile in it's uses from pizza crust, to a rice replacement, to delicious cauliflower style stakes. It offers a lower-carb replacement with no loss in flavor. This rice dish is super simple to make and can be seasoned up in a variety of ways to match whatever you are preparing. Let's get cooking!
Ingredients: 1/2 Medium Head Cauliflower (to make about 2-3 servings)
1 1/2 tbs Vegan Butter
1 Small Yellow Onion
2 Tbs Minced Garlic
Basil (I used fresh leaves from our garden)
Garlic Salt
Pepper
Cut your cauliflower into florets. Add a handful at a time to a food processor or blender and pulse until it begins to resemble rice.
Bring a pan over medium-high heat and melt your butter. Add in diced onion and saute for about 5 minutes, until it starts turning translucent. Add in your garlic and saute for another 2 or 3 minutes, until the garlic begins to brown.
Add in your cauliflower and seasonings. Continue cooking over medium heat for about 8 minutes, until the cauliflower begins to brown slightly.
Serve with your meal of choice and enjoy!!
Options: To use for a more Mexican style dish, swap out the basil for cilantro and add in some lime juice. You can also replace the butter with oil or even vegetable broth for a healthier option.
