Creamy Lemon Pasta | Vegan Pasta

3 Servings Whole Wheat Pasta
Juice from 1/2 a lemon
1 14oz can Coconut Milk
1 Small White Onion
4 Cloves Garlic
1-2 Tablespoons Olive Oil
Red Chili Flakes
Optional: Veggies of choice. I used zucchini and asparagus!
Heat oil over medium heat. Sauté diced onion for 5 minutes. Add chopped garlic and sauté another 2 minutes.
Add the remaining ingredients and cook on high for 15 minutes, stirring occasionally. It will be done when the sauce starts to thicken.
If you’re adding vegetables, sauté them in a separate pan until cooked to desired taste. Mix together in a pan and enjoy!
