Creamy Cucumber Pasta Salad | Vegan Meals

If you are looking for the perfect summertime dish than look no further! This creamy pasta salad is so flavorful, it's hard to believe it's vegan! This meal is a great dish to meal prep for lunches for the week, or to bring to a (socially distanced) gathering! The cucumbers add a refreshing touch, and the red onion is the ideal flavor additive. Let's get cooking!
Ingredients: 1 Large Cucumber
1/2 Red Onion
1 Package Pasta (I use Whole Wheat)
1 Can Low Fat Coconut Milk
1 Tsp White Vinegar
Fresh Dill (dried works fine too)
1 Tbs Olive Oil
1 Tsp ground mustard
1 Tsp Garlic Powder
Salt and Pepper
Optional: Top with vegan parmesan
Cook pasta according to package and desired tenderness.
While pasta is cooking, thinly slice your cucumbers and red onion. Chop up fresh dill if using. Set aside.
Mix together coconut milk, olive oil, vinegar, and seasonings in a bowl until well combined.
Once pasta is cooked, add in your veggies and dressing. Mix until well coated and refrigerate until ready to eat. Enjoy!!
