Coconut Snowballs | Vegan Treats

If you're looking for a perfectly sweet holiday treat, thank look no further! These coconut snowballs are so simple to make, and are a refreshing way to tame your sweet tooth! They make the perfect snack or healthy desert option for your holiday gathering. Let's get cooking!

Ingredients: 2tbs Unsweetened Coconut Milk

3tbs Maple Syrup

2-5tsp Coconut Oil

1 3/4 Cup Shredded Coconut

1/2tsp Vanilla Extract

1/2tsp Cinnamon

Sprinkle of Sea Salt

  1. Melt 2tsp of coconut oil and add to food processor with 1 cup of shredded coconut. Blend until a pasty consistency starts. I had to melt about 2-3 more Tsp of coconut oil to add in to reach this. There will still be some texture to the coconut shreds which is fine, we are looking to just get everything a bit sticky. Scrapes the sides as needed.

  2. Add maple syrup, coconut milk, vanilla, cinnamon and salt. Process until mixed together. Add in another 1/2 cup of shredded coconut and pulse a few times to combine.

  3. Scoop out mixture and roll into small balls. Place on a parchment paper lined baking dish. Once all the balls are made, sprinkle the remainder coconut over the tray and roll the balls to coat. Set in the fridge for at least one hour to harden.

NOTE: These can be eaten cold or at room temperature within 7 days. Both temperatures are delicious and will melt in your mouth. Makes 10-12 balls. Enjoy!
