Coconut Chia Pudding | Breakfast Ideas

Chia Seed Pudding truly took me for surprise the first time I tried it! The pudding offers a slightly sweet and unique flavor, with a texture just like pudding! This breakfast is so simple to make, perfectly filling, and packed full of nutrients. No better way to start your day. Let's get cooking!
Ingredients: 1 Cup Canned Low Fat Coconut Milk
1/4 Cup Chia Seeds
1 Tsp Maple Syrup
Optional: Fruit of choice and/or sweetener for toppings.
In a Tupperware container or mason jar, mix together chia seeds, coconut milk, and maple syrup. Stir until well combined. Cover and leave in the fridge overnight.
In the morning, mix thoroughly with a spoon. Add a small drip of water or coconut if needed to bring a smoother consistency.
When you're ready to enjoy, top with your favorite fruits or sweetener of choice! Pictured is bananas, blueberries, and a drizzle of agave. Some other great options would be pomegranate seeds, strawberries, blackberries...the options are endless. Enjoy!
