Chickpea Gyros with Vegan Tzatziki Sauce


If you’re looking for a quick meal thats packed with flavor, than look no further! This chickpea gyro can be made in about 20 minutes, including the homemade tzatziki. Packed with nutrients, this dish will leave you fueled for the rest of your evening. Let’s get cooking!


Ingredients for tzatziki:

1/2 Cup Non-Dairy Plain Yogurt

1/4 Cup Peeled and Grated Cucumber

1 Garlic Clove

2 Tbs Fresh Dill

1 Tsp White Vinegar

Salt


Gyros:

1 14oz Can Chickpeas

Whole Wheat Pita Bread

1/4 Cucumber, diced

1 Roma Tomato, diced

1/4 Red Onion, diced

Olive Oil

Oregano

Paprika

Garlic Salt

Curry Powder

Optional: Hummus


  1. Make the tzatziki sauce by combining all ingredients in a bowl. Mix until ingredients are well combined then place in the fridge until ready for use.

  2. Add olive oil to a pan over medium-high heat. Add in your chickpeas and heat until they begin to brown and crisp, about 10 minutes. Coat in above seasonings.

  3. While chickpeas are cooking, dice your veggies. I also recommend warming your pita in a toaster/toaster oven at this time.

  4. Build your gyro and top with tzatziki sauce. Enjoy!!

Tip: Toppings, chickpeas, and sauce make a great salad for lunches as well!
