Smashed Chickpea and Avocado Sandwich | Vegan Lunch Ideas

One thing that I have found surprisingly difficult as a vegan, is finding easy lunches to bring to work. The smashed avocado and chickpea sandwich has become a huge staple in my lunch box. Healthy, simple to make, and seriously delicious. Let's get cooking!
Ingredients: For 2 sandwiches, use 1 can of chickpeas.
1 ripened avocado
Garlic Salt and Pepper
Bread of your choice
Toppings: Vegan Mayo (I love Follow Your Heart- Veganese Mayo)
Tomato slices
Leaf of your choice (I use spinach for protein)
Drain can of chickpeas and add them to a medium sized mixing bowl. Scoop ripened avocado into a bowl and use a fork to mash down your avocado and chickpeas. Avocado should be creamy and most chickpeas should be smoothed down. I usually keep the chickpeas a little more full for texture.
Season with garlic salt and pepper. Mix together.
Build your sandwich!
