Chick'n Eggroll in a Bowl | Vegan Dinner Ideas
I love eggrolls. And really any style of food derived from Asian cultures. But, eating healthy means cutting back on carbs and fried foods. This eggroll in a bowl will perfectly fill your craving for an eggroll without the sluggish feeling. This dish will only take 2 pans to make and about a half hour or less of your time. Let's get cooking!
Ingredients (2 servings): 1/2 Medium Head of Green Cabbage
1 Yellow Onion (diced)
2 Medium Sized Carrots (shredded)
2 Tbs Minced Garlic
2 1/2 Tbs Soy Sauce
2 Tsp Apple Cider Vinegar
2 Tbs Sesame Teriyaki
Chick'n Alternative of your choice (I use Gardein)
Olive Oil or Sesame Oil
1/4 Cup Vegetable Broth
1/4 Cup Green Onions
Salt and Pepper
Prep your veggies: Finely dice your onion. Peel and shred carrots. Cut cabbage into thin strips.
Heat oil in a pan over medium-high heat. Add in onion and saute for 3-4 minutes. Add in carrots and garlic for another 3-4 minutes.
Mix in your vegetable oil, cabbage, seasoning and soy sauce. If using sesame oil as base, you can omit the sesame teriyaki. Cover and cook for about 15 minutes.
While your vegetables are cooking, make your chick'n according to the packaging.
Add green onions in to your vegetable mixture and serve. Enjoy!!
