Vegan Cheeseburger Stuffed Shells | Vegan Dinner
Tried out this new recipe on my parents who are newer to eating a plant based diet, and they loved it! This is one of the longer recipes on my blog, but oh so worth it. Topped with the best homemade cheese sauce I've ever had which can be used on many other recipes (like homemade mac and cheese)! Let's get cooking.
Ingredients: 1 Package Large Shell Noodles
1 Package Vegan Ground Beef (I used Morningstar brand)
1 Yellow Onion
A Bunch of Kale
1/3 Stick of Butter
Optional: Diced Pickles
2 Tsp Dried Red Onion
2 Tsp All Seasoning
Cheese Sauce: 1/4 Cup Non-Dairy Butter
1/4 Cup All Purpose Flour
2 Cups Unsweetened Non-Dairy Milk (I used Oat)
1 Tsp Paprika
1 Tsp Garlic Powder
1 Tsp Onion Powder
1 Tsp Yellow Mustard
Salt and Pepper
1 Package Vegan Cheddar Cheese
Preheat oven 350 Degrees F.
Bring a large pot of water to boil. Once boiling, add in your noodles and cook until they begin to soften.
While noodles are cooking, bring a skillet over medium-high heat. Sauté your onion for about 5-7 minutes, until it begins to lightly brown. Add in your ground beef and saute for another 5-7 minutes, until your crumbles begin to brown. Add in kale at the end, stirring until it has begun to wither.
In a saucepan over medium heat, melt your butter for the cheese sauce. Stir in the flour and cook for a few minutes, until mixture begins to thicken. Add in your milk slowly as you mix. Add in your spices and mustard. Cook until mixture begins to bubble then add in your vegan cheese. Simmer over low heat until creamy texture is acquired.
Grease a baking tray. Build stuffed shells by stuffing them with your ground beef mixture. Layer throughout your pan and cover with cheese sauce. Bake uncovered for 20-25 minutes, until bubbly and lightly browned. If adding pickles, add them to the pan in the last 5 minutes of baking. Enjoy!
