Burrito Bowl | Vegan Dinner Ideas

Watch out Chipotle, there's a new burrito bowl in town! I do love Chipotle as a quick food option that can be easily made vegan. But let's be honest, cooking at home is always going to be the healthier route. I made this bowl only using one pot and one pan, and it can be put together in about 35-40 minutes depending on the rice you use. Of course, you can always turn this into a burrito or a salad if that's more your vibe. Let's get cooking!

Ingredients: Rice, tortilla shell, or salad base of your choice

1/4 Cup Fresh Cilantro

1 14oz Can Black Beans

1/4 Cup Frozen Corn

1 Medium-Large Onion

1 Medium Pepper

Handful Green Onions

Jalapenos (if you like a little spice, I put two in mine)

Lime Juice

Taco Seasoning


Garlic Salt


Chili Powder

Olive Oil

Option to home-make your own salsa and guac, or buy store prepped.

  1. If using rice, cook according to the package. While rice is cooking. prep your veggies.

  2. Heat olive oil over a large skillet on medium-high heat and add in onion and peppers. Saute until onions begin to brown slightly, then add in your jalapenos, corn, and black beans. Chop your cilantro and green onions, setting some cilantro to the side to add to your rice.

  3. Add cilantro, green onions, and above seasonings to your veggies. Mix well and turn the heat to medium-low and let your veggies finish roasting.

  4. If using rice- When rice is done cooking, add in fresh cilantro and lime juice. Mix well.

  5. Add rice or greens to a bowl, or prep your tortilla shell. Add in your seasoned veggies and top with fresh salsa and guacamole. Enjoy!

Optional Toppings: Hot Sauce, Fresh Lime Juice, Crushed Tortilla Shells.
