BBQ Pineapple Tofu Bowl | Vegan Meal Prep



These tofu bowls are the perfect meal prep for the busiest of weeks! The dish is full of flavors, and the tofu and quinoa provide the perfect protein to help fuel the rest of your day. This dish would also make a tasty dinner at home. Let's get cooking!


Ingredients: 1 Package Extra Firm Tofu

1/2 Small Pineapple

1 Large Zucchini

1 Small Red or White Onion

1 Red Bell Pepper

1 Cup Uncooked Quinoa

BBQ Sauce of your Choice

Minced Garlic

Olive Oil

Salt and Pepper

  1. Press out the water from your tofu. I do this by wrapping it in a thin towel and placing it between two plates. Set something heavy on top for at least 10 minutes, but the longer the better.

  2. While tofu is being pressed, cook your quinoa according to the package.

  3. Prep your veggies. Heat a little oil in a pan over medium-high heat. Add in your veggies and minced garlic. Sautee for about 8 minutes, or until desired tenderness is met. Season with salt and pepper to taste.

  4. In another pan, or on your grill, grill pineapple until lightly browned on each side.

  5. Cut your tofu to desired sizes. In a pan or on your grill, cook tofu until slightly browned on each side. While tofu is cooking, continue to layer it with bbq sauce.

  6. Piece your bowls together and enjoy! I added a little extra bbq sauce on top of mine.
