Baked Tofu Bites

Tofu has become one of my favorite foods to work with lately. It is one of the most diverse vegan sources of protein, with endless amounts of ways to both cook and flavor it. This recipe is super simple and can be used in so many ways. I tossed mine in some buffalo sauce and made that tasty looking wrap above, and used the rest in the salad below! Let's get cooking!

Ingredients: 1 Block Extra-Firm Tofu

1 Cup Unsweetened Non-Dairy Milk (I used Almond)

1 Cup Bread Crumbs

2 Tbs Cornstarch

1 Cup Whole Wheat Flour

1/2 Tsp Liquid Smoke (can skip if you don't have this)

Garlic Powder

Chili Powder

Onion Powder

  1. Wrap your tofu in a paper towel and place it between 2 plates. Set something heavy on top (like a couple canned goods) to press out the excess water. Set for at least 10 minutes.

  2. Preheat oven to 425 degrees and line a baking sheet with parchment paper.

  3. While tofu is being pressed, set out 3 bowls. In the first bowl, combine your flour and cornstarch. Your second bowl is for milk and the liquid smoke (optional, but will add great flavor). Your final bowl is for the breadcrumbs and seasonings.

  4. Unwrap your tofu and cut it into bite sized pieces. Dip each piece first in your flour mixture, than your milk, then coat it in the breadcrumbs and seasoning. Place the tofu on your prepared baking sheet.

  5. Place tofu in the oven and cook for 20 minutes. Toss the tofu and cook for another 10 minutes, until golden brown and crispy. Once done, toss in your desired sauce and enjoy!
