Healthier Apple Muffins| Vegan Baking
Fall is officially here, and this means comfort food galore! I am not big on baking, but we went apple picking last weekend so I had to find something fun to do with all our Honey crisps! These apple muffins came out so good and are a bit healthier take on baking. All you need is one mixing bowl, a muffin tin, and about 25 minutes of your time. Let's get baking!
Ingredients: For 6 Muffins
1 Medium/Large or 2 Smaller Apples
1/4 Cup Vegan Butter (I use Country Crock Brand)
1/4 Cup Maple Syrup
1/4 Cup Sweetened Apple Sauce
1 Tsp Vanilla
1 Cup Whole Wheat Flour
1 Tsp Baking Power
1 Tsp Baking Soda
1 Tsp Salt
2 Tsp Cinnamon
1/8 Cup Almond Milk (add more as needed)
Pre-heat oven to 350 degrees. Grease or spray your muffin tray and set aside.
In a mixing bowl, add in slightly melted vegan butter and maple syrup. Wisk together until well combined. Add in apple sauce and vanilla and mix together.
Using a sifter, add in flour. baking powder, baking soda, and salt. While stirring, begin to add in your almond milk until fully combined. It should begin to look like a baking mixture at this point.
Fold in your chopped apples and cinnamon. Once combined, spoon your mixture evenly into your muffin tray. (Option to sprinkle a little sugar or brown sugar on top here if desired)
Bake for about 20 minutes or until a toothpick comes out clean. Top with maple syrup when warm and enjoy!
